soybean

B2
noun

Pronunciation

UK

  • /sˈɔɪbiːn/

US

  • /ˈsɔɪˌbin/

Description

This legume has been grown in East Asia for thousands of years and is now an important crop around the world. People eat it in many forms, including tofu, soy milk, miso, tempeh, and edamame. It is also used to make cooking oil, and a large share of the crop is processed for animal feed.

Farmers often include it in crop rotation because, like other legumes, it can help add nitrogen to the soil. Today, it is one of the world's major farm crops and is used in food, feed, and some industrial products such as biodiesel.
